Turmeric
Turmeric tea has an earthy, slightly peppery taste with a warm, mustard-like bitterness underneath. The ground spice is a deep golden-orange powder, fine and vivid enough to stain a spoon. Because it's ground fine, it steeps quickly: infuse it in water at 205 °F (96 °C) for 5 to 10 minutes, then strain well through a fine sieve or cloth to catch the sediment. Turmeric pairs well with fresh ginger, black pepper, and a little honey. It's a familiar ingredient in Indian kitchens, used in many everyday dishes well beyond the teacup.
