Rosemary
Rosemary tea tastes piney and resinous, with a slightly bitter, herbal edge and a sharp aroma that fills the kitchen as it steeps. The dried leaves are thin, dark green needles, small and dense. Steep them in water at 205 °F (96 °C) for 8 to 15 minutes, since the tough needles give up their flavor slowly. Rosemary pairs well with lemon peel, mint, or a bit of honey to soften the bitterness. It is a common herb in Mediterranean kitchens, where the fresh sprigs flavor everything from roasted vegetables to bread.
