Lemon balm
Lemon balm tea has a mild, lemony taste with a soft herbal sweetness, gentler than lemon peel or lemongrass. The dried leaves are crinkled and dark green, with a faint citrus scent even before they touch water. Because its delicate oils fade fast in very hot water, steep it just below boiling, around 185 °F (85 °C), for 4 to 6 minutes rather than a full rolling boil. Lemon balm pairs well with mint, rose petals, or a touch of honey. It's a common addition to home herb gardens, grown widely for its citrus-scented leaves.
