Lavender
Dried lavender tea has a light floral taste with a faint herbal sweetness, more subtle in a cup than the flower smells in a jar. The dried buds are small, tightly closed, and a soft purple-gray in color. Steep them in water at 205 °F (96 °C) for 5 to 7 minutes; a longer steep at full heat can turn the cup bitter, so pull it earlier if that happens. Lavender pairs well with lemon balm, rose petals, or a little honey. In the south of France, lavender buds are a familiar addition to herbal tea blends sold throughout the region.
