Ginger

Fresh ginger tea has a warm, peppery bite with a bright citrus note underneath, sharper than the dried spice. Sliced or grated, the fresh root is pale yellow with a fibrous, slightly stringy texture. To brew, simmer the sliced root gently in water at 205 °F (96 °C) for 15 to 20 minutes, letting the heat draw out the full flavor. Ginger pairs naturally with lemon, honey, or a stick of cinnamon. In Korea, sliced ginger is kept in honey and stirred into hot water for a cup called saenggang-cha.
