Cranberry
Dried cranberry tea has a tart, fruity flavor with a natural sweet-tart edge, deeper and more concentrated than fresh cranberry juice. The dried berries are a deep red, wrinkled and chewy before they go into the water. Steep them at 205 °F (96 °C) for 10 to 20 minutes, since the tough skins need the longer soak to release their color and flavor. The tart profile pairs naturally with orange peel, cinnamon, or a spoonful of honey. Cranberries are native to North America and are a familiar ingredient in New England kitchens, dried for use well past their short autumn season.
