Cinnamon
Cinnamon stick tea has a warm, sweet-spicy flavor with a woody depth that builds the longer it simmers. The stick itself is a rolled, papery brown bark, rigid until it softens in hot water. Simmer one stick gently in water at 205 °F (96 °C) for 10 to 20 minutes to draw out its full flavor. Cinnamon pairs naturally with orange peel, clove, or a spoonful of honey. In Mexico, cinnamon tea is made by simmering a whole stick in water and is often sweetened with piloncillo.
