Bay Leaf
Bay leaf tea has a fresh, herbal aroma with notes of pine and a hint of mint, and a slightly bitter edge that softens as it steeps. The dried leaf is whole, olive green to light brown, firm, and a little brittle. For an 8 oz (240 ml) cup, pour water at 205 °F (96 °C) over 1 dried bay leaf, cover, and steep for 8 to 15 minutes. For a stronger cup, add a second leaf. Bay pairs well with cinnamon, lemon, and a spoonful of honey. Lift out the leaf before sipping.
